Taco Tuesday

I eat these Tacos ALL THE DAMN TIME, its honestly a little embarrassing. We make about 3 lbs. and it lasts (lunch/dinner) for about a week and a half. It’s taken me time to perfect tacos as a gluten and dairy free dish and I’m excited to share with you!

Here is what You’ll Need:

  • Ground Beef (grass fed/organic)

  • Taco Seasoning (linked below)

  • Corn Tortillas (Soft)

  • Onions

  • Cilantro

  • Peppers

  • Tomato (optional)

  • Avocado

  • Limes

  • Chips

Literally this is no different than other Tacos, just brown the ground beef. Once brown, strain and then add onions, seasoning (if making more than 1 lb, adjust accordingly) and water. Let simmer for about 15 minutes.

While that simmers, cut peppers, cilantro, tomato, avocado for toppings! Can serve as a taco bowl, taco salad AND classic tacos!

YHUMMMM!

GUACAMOLE STARTER:

  • Avocado

  • Lime Juice (I juice a batch and keep in mason jar in my fridge!)

  • Cilantro (Store in cup with 1-3 inches of water and cover with a loose zip-lock baggy over leaves)

  • S&P

Mix it up and ENJOY!

Serve as a starter or a side :)
