Un-Traditional Glass Noodle Soup

 
 

What you’ll need:

  • Bone Broth

  • Chicken Leg Quarters

  • Celery

  • Mushrooms

  • Carrots

  • Onion

  • Glass Noodles

  • Egg

  • Parsley

  • Dill

  • Bay Leaf

  • S & P

 

Instructions:

  1. Brown the chicken quarters, then add to stock pot.

  2. Brown the mushrooms and onions, then add to the same stock pot.

  3. Combine the bone broth, cut up raw and fried vegetables, seasonings, the browned chicken quarters with all oils from the pan.

  4. Bring to boil.

  5. Let sit on low/simmer for at least 2 hours, the longer the more flavor!

When you are ready to serve the soup,

  1. Prep the glass noodle. These will take about 6-8 minutes to cook once the water in boiling. (Can be substituted for regular gf/df pasta or rice!)

  2. Then fry up one egg, over easy per serving.

  3. Remove any bones from the stock

  4. Shred the chicken with a fork.

  5. Combine and enjoy!
